Spices, Spices, Spices – Imagine being enthralled by our spicy cocktails using nutmeg, ginger, vanilla and cloves at our Cocktail party at the Jade Mountain Club. Experience our new spice garden whilst touring our very own organic farm, grasp an understanding of how spices are grown and partake in a cooking class! Uncover the spicing secrets of Tandoor Cooking in the Caribbean at our Beach Tandoori cooking class. Enjoy a five course spectacular dining experience with a seasonal and sustainable menu infused with our organic grown produce and spices.

Not forgetting our infamous jungle burger bash – try our tantalizing world renowned signature burger of course slightly spiced to awaken those taste buds! As a Bean to Bar organic single estate boutique chocolate maker an Emerald Estate Chocolate & Spice Sensory Tasting is an absolute must do. Plus try your hands at an interactive spice blending class and take home your favorites. Enjoy a spicy manager’s cocktail party with a live ‘satay’ station and spicy succulent St. Lucian treats held weekly at our Beach restaurant.

This year we are going to have Miami Celebrity Chef Todd Erickson come out share his talents again. We are using the festival this year to showcase our Vegan Emerald Restaurant. Todd is our Visiting Caribbean Vegan Chef. Guests will be joining the chefs for a hands on approach to our farm Emerald Estate as we tour and discover many of the spices, herbs, tropical fruits and vegetables that we grow for our guests. Todd will be cooking a special 6 course Caribbean Vegan Farm to Table Dinner in Emerald Restaurant. He will also be leading a Vegan cooking class about preparing delicious nut cheeses. Todd Erickson is the executive chef and partner of GLAM Vegan Miami, Society Ft. Myers and Huahua’s Taqueria South Beach. Erickson’s approach reflects his passion for both travel and regional cuisines, and has earned him a following with respected critics and food novices alike. A hands on interactive experience in the world of cacao and chocolate. Start the weekend with a Chocolate enthused Cocktail Party in the Jade Lounge with tantalizing chocolate inspired savory canapés and cocktails. Let’s go back to basics with our Emerald Estate Organic farm tour and learn not only about our ‘farm to table’ concept showcasing our fresh organic produce, but also enter the world of the Cacao Plantation.

Alchemy of chocolate - matching and tasting wine with our own hand made organic Emerald Estate Chocolate. Look, smell, taste - starting with your basic senses and expanding from there. A sumptuous chocolate dinner in the evening, – with an awe inspiring menu and a creative chocolate flair. How can one resist breakfast in bed with a variety of chocolate breakfast treats from chocolate croissants to chocolate French toast! Acquaint yourselves with a chocolate truffle workshop get involved and take home what you make. Adult chocolate milk shakes and jungle burgers will entice you over to the Anse Mamin beach. Follow up with a walk through the Anse Mamin historical plantation which was originally a sugar cane plantation in the 18th century, until changing hands and moving to a cocoa crop. A chocolate sensory tasting experience is not complete without a trip to the chocolate lab where you will discover how chocolate is actually made. The Anse Chastanet chocolate cocktail party comes with spiced rum punch, passed Hors D’oeuvres to top it off experience a St Lucian Tropical Chocolate Fondue using Nick Troubetzkoy’s Emerald Estate Chocolate.

Treat yourselves to a wine-filled weekend that will please even the most discerning palate. Start your experience with the first of three wine pairing dinners that will join Chef Allen Susser’s award winning Jade Cuisine with wines chosen by Mike DeSimone and Jeff Jenssen, The World Wine Guys. Each evening will bring a unique menu highlighting the best of Jade Mountain’s wines from around the world served alongside sumptuous dishes featuring fresh produce from our Emerald Estate Organic Farm.

Cool down on Friday afternoon with an informal wine tasting showcasing a refreshing selection of wines that are perfect for warm weather sipping. The evening brings us another wine dinner offering a delectable lineup of courses paired with wines specially chosen for tonight’s menu. After dinner, enjoy our Rum Tasting Under the Stars, indulging your taste buds in some of the Caribbean’s finest sipping rums on our breathtaking Celestial Terrace.

On Saturday evening, you can indulge in an exclusive red wine tasting. The wines presented have been featured in the World Wine Guys’ book Red Wine, winner of the Gourmand International Award for Best Drinks Book in the World in 2018. This informative, educational, but most of all delectable event will whet your appetite for our third sumptuous wine pairing dinner.

And finally, what could be better than Sparkling Brunch, offering inspired daytime fare served up with your choice of Mimosas, Bellinis, or just an exhilarating glass of unadorned Prosecco?

Our James Beard Award-winning consulting Chef, Allen Susser, has set the modern culinary stage for Jade Cuisine. We celebrate the bold flavors of St. Lucia and its Caribbean heritage in our cooking at Jade Mountain. Tonight’s menu is created with the leadership of the resort's Executive Chef, Juan Bochenski along with Chef de Cuisine, Elijah Jules. Our organic farm, Emerald Estate, also plays a major role in our culinary creativity. Indulge in an Exclusive Red Wine Tasting from 5:30 -6:30 Jade Club Lounge Mike and Jeff conduct and host a formal sit down tasting of 6 – 8 wines. Wines will be predominantly red varietals for the serious wine drinker/collector. Discussion will be informative, educational, and entertaining for the serious yet light hearted and fun for the not-so-serious wine drinker. The wines presented have been featured in the World Wine Guys’ book Red Wine, winner of the Gourmand International Award for Best Drinks Book in the World in 2018. They are award winning journalists as well as best-selling and award- winning authors. Well known in the wine world as “edu-tainers—part educators and part entertainers,” they have been featured guests on The TODAY Show, The Martha Stewart Show, Better TV, and the CBS, FOX, Hallmark, WGN, and NBC networks.

We are proud to welcome Nina Compton for our 13th Annual Mango Madness Festival. Nina Compton is the first Mango Guest Chef for our Mango Madness festival on June 9 – 15. Born and raised in St. Lucia, Nina grew up with the flavors and beauty of the Caribbean and also serves as Saint Lucia’s international culinary Ambassador. Nina is the Winner of the 2018 James Beard Awards “Best Chef: South” and one of Food & Wine magazine’s "Best New Chefs 2017", Nina Compton is Chef/Owner of award-winning restaurant Compère Lapin in New Orleans’ Warehouse District. Her second restaurant venture, Bywater American Bistro (BABs), is in New Orleans’ “Sliver by the River” Bywater neighborhood. Join Chef Allen and Chef Nina as they share with you the sensual and exotic flavors of our Mangos.

Farm to Table Wine & Food with Giuliano Hazan | July 14 – 19, 2020

Join Chef Allen Susser and Giuliano Hazan to discover modern mediterranean cooking making full use of organically grown Caribbean produce and sustainably caught fresh seafood. Giuliano Hazan is an Italian cookbook author and educator who travels throughout the world teaching Italian cooking. He is the son of Italian cooking doyenne Marcella Hazan and wine expert Victor Hazan. Giuliano Hazan is the award-winning author of the best-selling cookbooks, Every Night Italian, The Classic Pasta Cookbook, How to Cook Italian, Thirty Minute Pasta, and Hazan Family Favorites. He teaches Italian cooking classes throughout the U.S. and at his school in Italy.

CARIBBEAN VEGAN FESTIVAL

Rich Landau & Kate Jacoby | August 5 – 10, 2020

In August, Chef Allen Susser will be joined by husband/wife team Richard Landau and Kate Jacoby. Richard and Kate are the Chefs/Owners of Philadelphia's renowned vegetable restaurant, Vedge. In recent years, they have grown their restaurant group to include their street food bar, V Street, as well as their latest effort, Fancy Radish, in Washington DC. Vedge, a modern vegetable restaurant that opened in 2011 to rave reviews from diners and critics alike. Landau has been at the forefront of vegetarian dining since 1994, when he opened his first restaurant. In 2009, he served the first-ever vegan dinner at the James Beard House. Landau has co-authored four cookbooks, including the most recent “Vedge: 100 Plates Large and Small that Redefine Vegetable Cooking,” and he has been a finalist multiple times for the James Beard Foundation's Best Chef Mid Atlantic as well as twice being named “Best chef in Philadelphia” by Philadelphia Magazine. His wife, Kate is a James Beard Nominated Pastry Chef and a Certified Sommelier. Her recent focus also includes overseeing their restaurant’s beverage program. Kate influenced Vegan cuisine to become a fine dining experience.

LOBSTER AND CHAMPAGNE WITH MICHELLE BERNSTEIN

This is going to be an exciting week with Chef Allen Susser and visiting Chef Michelle Bernstein taking a dive into the culinary world of Caribbean lobster! Michelle Bernstein is a James Beard Foundation Award-winning chef from Miami, Florida. She has drawn widespread acclaim for her culinary skills andas an expert in Latin-style flavors of cooking.Her incredible talent andpersonality has taken her outside the kitchen and into the world of books and television, she is the author of Cuisine a Latina (Houghton Mifflin Harcourt2008), Host of Check Please South Florida (WPBT2) and Host of Soflo Taste(Channel 10). Bernstein cooks food she feels passionate about and knowsthat this love translates to her diners. We are pleased to welcome her to Jade Mountain.
