Drenched in exotic beauty and erupting with flavor Jade Mountain nourishes both the body and soul. It's "Jade Cuisine" created by James Beard award winner, Chef Allen Susser, is a brave new world of tropical flavors. His cuisine is exotic and delicious, with a history of fusion it its fabric.

"Jade Cuisine is a celebration of the bold flavors of the world's tropical cultures in my kitchen at Jade Mountain", says Chef Allen. "The cooking is fresh, simple and succinct. There is always flexibility for the seasons, and availability of local product. As a chef my passion is taste. The bottom line here is that food comes down to nature and the nature of taste."

Our food
The menu for the club ranges from relaxed and comforting to sophisticated and adventuresome but always with a sense of balance. The flavors of Jade Cuisine are sweet and spicy in an aromatic harmony.

Breakfast
Breakfast is a glorious time of the day in Jade Mountain. Your choices are based on ingredients locally farmed, harvested and fished. Taking all the best St Lucian local flavor has to offer and capturing it on the plate. Freshly squeezed exotic juices, home made granola, hand picked tropical fruits, farm fresh eggs and artisan breads.

Lunch
The flavors that take shape are modern yet simple for the palate to comprehend: Crispy, refreshing salads, exciting healthy sandwiches, the best Burger in the Caribbean, and pristine fish and seafood.

The food service at Jade Mountain draws its energy and style from the region. The dinning room captures a commanding view of nature's awesome beauty: the World Heritage Petons, the Caribbean seascape and true blue skies. The service itself always reflects a sense of warm professionalism and genuine hospitality.

Beverage
The beverage program includes freshly squeezed tropical and citrus juices, elixirs, modern martinis, regional aperitifs, Champagnes and international wines. The wine program will be an important feature. In our futuristic temperature controlled wine cellar we feature local wines, great French finds, Spanish treasures, as well as California and other New World selections. Our rums are local and some of the best in the Caribbean.

A Spoonful of Paradise Classes
Chef Allen's culinary classes. The classes include hands on in the kitchens as well as far a field classes. The organic garden offers hands-on practical knowledge and experience connecting the earth, to the kitchen, to the plate. Organized culinary field trips include tropical fruit foraging, fishing day trips, exploring costal St Lucia, hands on chocolate making classes, and spice tours. Our culinary resources
The sense of discovery begins with this unique St Lucian region. Literally - it is a new frontier - still to be discovered. The resort is naturally all about food. The grounds include an old and tropical plantation called Anse Mamin. The plantation was originally a sugarcane plantation in the 18th century, until changing hands and turning its fields towards cocoa bean production. The cocoa trees are still numerous on the grounds for guest to see and for us to produce our own estate chocolates. In Anse Mamin one can find turmeric, cashews, tamarind, mango, avocado, oranges, tangerines, guavas, papaya, coconut, breadfruit, yams and sweet potatoes. The superior taste and quality of the ingredients as well as the connection to the earth is the motivation. By happenstance Anse Mamin is a wonderful organic resource for our menu.

Furthermore playing a role in our culinary arts is the Troubetzkoy's organic rain forest farm, the EMERALD ESTATE, in the Soufriere hills. The garden and farm already include vanilla beans, bay leaf, nutmeg trees, cinnamon trees, and numerous varieties of mango, sour orange, and coconut trees. The Emerald farm grows leaves, greens, vegetables, and herbs for the restaurant. Our close relationship with many fishermen in town as well as up and down the coast gives us access to the freshest and most pristine fish in St Lucia.

The Treehouse Restaurant serves the best in St. Lucian cuisine.Jade Mountain guests can also dine at the restaurants of ANSE CHASTANET located below JADE MOUNTAIN and easily accessible by foot or by the resort shuttle.

At ANSE CHASTANET's Piti Piton and Treehouse Restaurant, the culinary team celebrates award winning Tropical World Cuisine, blending Caribbean cuisine with other world cuisine experiences, from French to Mediterranean and from Fusion to New World cuisine. The dinner menu changes daily and consists of a 4 course meal served in a romantic candlelit ambiance, surrounded by beautiful original artwork. Part of the Piton Restaurant is the Treehouse, where diners are seated in an open-air area amidst treetops as the name suggests. Dinner is served daily with the exception of Tuesdays.

ANSE CHASTANET menus always include vegetarian options and the culinary team is happy to meet any dietary requirements.

The Trou au Diable Restaurant serves lunch daily. The lunch menu offers a wide and varied choice of appetizers, salads, sandwiches, burgers and creole specialities from an à la carte menu, in addition to a large buffet spread with hot and cold dishes.

On Tuesday evenings, guests may enjoy a special Caribbean Buffet which commences with a cocktail reception followed by dinner in the Trou au Diable beach restaurant . The atmosphere is festive with the entire stretch of beach in front of the restaurant lit up by flambeau candles.

The Trou au Diable restaurant offers a special Indian theme menu titled APSARA on all evenings except Tuesday. APSARA is an innovative fusion of modern East Indian and Caribbean cooking, a celebration of St.Lucia's historical and cultural ties with East India. For the less adventurous eaters, there also is a BEACH GRILL menu available.
